A recent lunch at Withlacoochee Technical College’s Cypress Room left a lasting impression on a local couple. On an unspecified date, the wife and husband, who is over 80, enjoyed a meal prepared and served by students at the Professional Culinary Arts and Hospitality Academy. The college features a fully equipped, professional-grade kitchen, and the Cypress Room provides the perfect setting for displaying their talents.
The program consists of 1,200 hours of intensive culinary training. By the time they graduate, these students are not simply ready to be line cooks , they are being trained to enter the fine dining world with the skills and confidence of future chefs. The Cypress Room itself accommodates just four tables, with seating for approximately 20 diners. Its small size creates an intimate atmosphere that is ideal for a fine dining experience. The limited seating also ensures attentive service and a relaxed pace.
The husband ordered the gnocchi with sausage, which he found to be rich, balanced, and very satisfying. However, he noted that the presentation could be improved with a more refined plating choice. His wife had a pasta shrimp dish, which she enjoyed, along with the delicious bread made by the students. The dessert, lemon bread, was a bit too thick for his taste.
The service reflected the professionalism these students are clearly being taught. The couple was thoroughly impressed with their experience and expects many of these students to go on to successful culinary careers.
